| [Fermented blue crabs with soy sauce ]

- Main ingredients: Blue crab,
Soy sauce, Red pepper seed, Ginger, Garlic, Red pepper,
Dried pepper, Pickling brine, Millet jelly, Licorice root,
Angelica gigas, Jujube
- Special feature: You can
enjoy the peculiar taste of fresh blue crab, which is not
salty unlike the conventionally fermented blue crab.
Recipe: Wash blue crabs especially shells and claws and
remove the water. Mix ginger, garlic, licorice root and
jujube with water in the same quantity of soy sauce. Boil
it for 3 hours and then cool it. Put the cleaned blue crab
into a jar and pour cold seasoned sauce prepared as above.
Ferment it for 3 days, separating the sauce to boil and
pouring it again in the jar after cooling it once a day.
